Something that had always felt wrong with the Bayou Classic range of outdoor turkey fryers was the overly high price tag. First of all, those who want an outdoor turkey fryer tend to already have a heavy gauge outdoor gas burner so purchasing one as a set does not make any sense. In this respect, the Bayou Classic 1118 is excellent as it retails without the gas burner and is compatible with just about any outdoor gas burner. Moreover, the construction is solid thanks to its stainless steel exterior. This is worth the investment as aluminium stockpots tend to leech aluminium into food, which is a health hazard. On the other hand, the Bayou Classic 1118 and its stainless steel design cooks food well and cleans up great afterwards.
We loved the skewer and vented lid design of the stockpot as it let us cook without having to constantly move the oil around. The impressive 32 quart capacity is actually sufficient to handle a large turkey at once. We also tried making a few whole chicken fries and were pleasantly surprised that it can take in 3 whole birds at once. What we were not that impressed with was its delayed heat up. You have to spend at least ¼th of your propane tank’s capacity to get the oil heated to around 300 degree Farenhite. Other than this minor complaint, we loved our Bayou Classic 1118. The ability to completely fry three whole birds in under 20 minutes is what caught our attention the most. We will probably continue to use the Bayou Classic 1118 as a chicken fryer rather than a turkey fryer simply because of the ease of doing so. We have not yet tried steaming vegetables, fish, crawfish and other such stuff but it should do quite well considering its impressive performance with turkey and chicken.
